Duck a l'Orange

 

Number of Servings: 6
Prep Time: approx. 3 1/2 hours Skill Level: Average

Ingredients

6 lb. duck, cut in pieces
1 tablespoon grated orange peel
1 clove garlic, minced
1 tablespoon flour
3 tablespoon vegetable oil
1 1/4 cup Orange juice
2 tablespoons honey
1/8 teaspoon pepper

Instructions:

1. Preheat oven to 325 degrees.
2. Prick duck pieces with fork and place on a rack in roasting pan.
3. Roast duck, allowing about 20 minutes per pound, and baste occasionally with juices from the pan
4. In medium saucepan, heat vegetable oil
5. Saute orange peel and garlic in hot oil, then stir in flour until smooth.
6. Slowly add orange and honey to simmer for a few minutes on low heat.
7. Pour hot orange sauce over duck just before serving.
