Italian Antipasto

 

Number of Servings: 4
Prep Time: 30 mins. Skill Level: Easy

Ingredients

1 head Iceberg or Romaine lettuce
1 can white tuna in oil
1 small jar roasted red peppers, drained
2 medium tomatoes, cut in wedges
12 black olives
12 green olives
6 rolled slices provoline cheese
6 rolled slices genoa salami
6 rolled slices prosciutto

Instructions:

1. On a large platter, arrange lettuce leaves around the sides.
2. Drain oil from tuna and place in middle of platter.
3. Separate the platter into four sections by marking out with roasted red peppers.
4. In between roasted red peppers, arrange rolled cold cuts & cheese in staggered amounts.
5. Arrange olives and tomato slices in equal amounts around the plate.

Helpful Hints:

Feel free to top the whole platter with drizzled amounts of oil and vinegar, or mix up the Italian cold cuts using pepperoni, mortadella, or different Italian cheeses.
