1 cup plain yogurt

1 teaspoon olive oil

1 teaspoon lemon juice

1 unpeeled cucumber, diced

1 small clove garlic, minced

1 teaspoon fresh dill

salt and pepper


1. In a small bowl, mix cucumber and sprinkle salt. Let sit for an hour, then drain off cucumber juice that forms. Remove cucumber and let drain on paper towels to absorb any extra moisture.

2. In a medium bowl, add cucumbers and combine with yogurt, garlic, olive oil, lemon juice, dill and salt and pepper to taste.

3. Refrigerate until ready to serve.

Helpful Hints:

This sauce is the traditional Greek preparation for any kind of pita sandwich or gyro.
