Zucchini Bread

3 cups flour
1 1/2 cups sugar
1 tsp salt
1 tsp baking powder
3/4 tsp baking soda
2 cups unpeeled zucchini, minced
1 cup chopped nuts
1 cup raisins
3 eggs
1 cup vegetable oil


1. Preheat oven to 350F.
2. In a large bowl, add flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins.
3. In a separate bowl beat eggs and stir in oil.
4. Make well in flour mixture and pour egg and oil mixture and stir until blended. Pour into a greased loaf pan. Bake for 1 1/2 hours or until a toothpick inserted in middle comes out clean.
