Instructions:

1. In a large saucepan, pour 2 quarts milk and just bring to a boil. 2. Reduce heat to low, then stir in rice. 3. Simmer uncovered for 15 minutes, stirring every few minutes to keep rice from sticking to pan. 4. In a mixing bowl, beat together eggs, sugar, milk, vanilla extract, and raisins (optional). 5. Stir egg mixture into cooked rice and continue stirring as it cooks for a few more minutes to thicken. 6. Pour rice mixture into 9 x 13 pan and allow to cool. 7. Cover top with plastic wrap and place in refrigerator to chill thoroughly.
