Rice Pudding

 

Number of Servings: 8-10
Prep Time: 2 hours Skill Level: Easy

Ingredients

2 quarts milk
3/4 cup long grain white rice
3 eggs
1/2 cup sugar
1 cup milk
1 teaspoon vanilla
Raisins (optional)

Instructions:

1. In a large saucepan, pour 2 quarts milk and just bring to a boil.
2. Reduce heat to low, then stir in rice.
3. Simmer uncovered for 15 minutes, stirring every few minutes to keep rice from sticking to pan.
4. In a mixing bowl, beat together eggs, sugar, milk, vanilla extract, and raisins (optional).
5. Stir egg mixture into cooked rice and continue stirring as it cooks for a few more minutes to thicken.
6. Pour rice mixture into 9 x 13 pan and allow to cool.
7. Cover top with plastic wrap and place in refrigerator to chill thoroughly.

Helpful Hints:

A special winter treat for my family includes whipping up some egg whites and sugar until stiff, then spreading it around the top of the pudding (let pudding cool first). Then return the pan to the oven at 350F for a minute until peaks of the merengue turn golden brown. Remove and let cool again before serving.

This is the old-fashioned recipe that's a good comfort food for kids and adults.
