New Orleans Pralines

Ingredients


1 cup sugar

1 cup brown sugar

1/2 cup half-and-half

2 tablespoons butter

1/2 teaspoon vanilla extract

1 1/2 cups pecans, halved

Instructions:


1. In a heavy saucepan, mix sugar, brown sugar, and half-and-half.
2. Slowly bring to a boil until the mixture reaches the soft ball stage (between 234F and 240F) then remove from heat and beat until creamy.
3. Stir in butter, vanilla and pecan pieces.
4. Allow to cool until thickened, then drop by spoonfuls onto wax paper and let cool.
