Cranberry Orange Scones
Ingredients
1 cup dried cranberries3 oranges, grated zest5 cups cake flour3 Tbs. baking powder1 tsp. salt1/4 cup sugar6 oz cold diced butter2 cups cream (approx.)
Instructions:
1. Preheat oven to 400 degrees.2. Place flour, baking powder, salt, sugar, butter, orange zest, and cranberries together and mix well.3. Pour in 2 cups of cream and gently mix, add a little more cream as needed to make nice dough.4. Shape the dough into 2 circles about 8 inches in diameter. Cut into 8 wedges; bake about 15 to 20 minutes or until lightly browned.

Helpful Hints:
These can be served with butter or with clotted cream or creme fraiche. Delicious at brunch or tea. You might even consider serving this as a dessert!
