Insalata Caprese

Ingredients

4 large round (not Italian plum) tomatoes, sliced
1/2 pound Fresh Mozzarella Cheese, drained, sliced
1/3 cup basil leaves
1/4 tsp garlic powder or 1 small Garlic clove
3 Tbsp. virgin olive oil
2 Tbsp. red wine vinegar
1/4 tsp. salt
1/4 tsp. ground black pepper

Instructions:

1. Place tomato slice, cheese slice and a basil leaf alternately on platter or on four individual plates until all of the tomatoes and cheese are distributed.

2. Place oil and vinegar and garlic powder in salad dressing cruet or mixing bowl.

3. Shake oil and vinegar with garlic until thoroughly mixed or mix with wire whisk in bowl until well blended.

4. Drizzle over tomatoes.

5. Sprinkle lightly with salt and pepper.

6. Serve with warm or toasted Italian bread slices.

Helpful Hints:

If you want to use fresh garlic, use one clove and make small slices in the clove. Add the whole garlic clove to the oil and vinegar. That way you can have the garlic taste without anyone biting into a piece of fresh garlic.

You can use balsamic vinegar for this, but it has a slightly sweeter taste than the red wine vinegar.
