Mild Guacamole Dip

Ingredients
|
4 medium size ripe avocados 1 red chile pepper, seeded and finely chopped 4 cloves garlic, minced 1/4 sweet red onion, finely chopped 4 tablespoons olive oil , divided Juice of 1 lime Salt and pepper to taste Pinch of cayenne, for garnish

Instructions:

1. Cut the avocados in half lengthwise, pull the halves apart and remove the seeds.2. Scoop out the fruit into a medium-size bowl and mash with a fork. Don't use a food processor, you want the avocado mash to be slightly lumpy. 3. Gently stir in the garlic, red onion, red chile, 3 tablespoons of the olive oil, and lime juice. 4. Add salt and pepper. 5. Drizzle the remainder of the olive oil over the dip and sprinkle with cayenne for garnish. 6. Serve immediately.

Helpful Hints:

You know your guests. If they like a spicier dip try adding a seeded and very finely chopped jalapeno pepper and an extra red chile to the dip. For moderately hot guacamole just add a second red chile pepper.Guacamole tends to turn an unappealing brown color when it sits, even when refrigerated. Squeeze a bit of lemon juice on the dip -- the acid from the lemon juice slows down the oxidation that causes the brown look, and the lemon adds to the taste. This recipe is a great addition to homemade tacos or nachos as well as a favorite party dip.
