White Bean Chili w/ Chicken

Ingredients
|
3 16 oz cans cannellini beans 2 cups chicken broth 1 small onion, chopped 1 teaspoon cumin 1 teaspoon chili powder 1 teaspoon basil 1 lb chicken, cubed

Instructions:

1. Add beans, broth, onion, cumin, chili powder and basil to large, thick bottomed pot.2. Heat to boiling, about 4 -6 minutes. Stir often to make sure the bottom does not burn. 3. Reduce heat and add chicken. 4. Simmer for 1/2 hour or until chicken is fully cooked. 5. Serve with rice or pasta.

Helpful Hints:
|
If you don't have chicken broth handy, you can cook 2 1/2 cups of water with two chicken bullion cubes. Boil until bullion is completely dissolved.This makes a great cold weather dish. Perfect for football parties.
