Smokehouse Beer Can Chicken

 

Number of Servings: 4
Prep Time: 1 hr 45 min Skill Level: Average

Ingredients:

1 - 3 lb chicken (1.5 kg)
1/2 cup Knorr Smokehouse Mesquite Marinade (125 mL)
1 can premium beer
1 lime, cut in wedges

Instructions:

1. Wash chicken, including cavity, with cold water; pat with paper towel to dry.

2. Place chicken in a large bowl and marinate with 1/4 cup (50 mL) Knorr Smokehouse Mesquite Marinade.

3. Let soak at room temperature for 30 minutes or covered, in refrigerator, overnight.

4. Preheat one side of the grill on high heat.

5. Pour out 1/4 of the beer from the can.

6. Place can on a flat surface and insert chicken onto can, so can is wedged into the cavity and chicken stands upright. (Use legs to steady chicken if needed.)

7. Tuck in wing tips to prevent burning. Stand chicken on side of grill where heat is off; close cover.

8. After 30 minutes, brush chicken occasionally using remaining 1/4 cup Knorr Smokehouse Mesquite Marinade.

9. If any part of the chicken starts to over darken, cover with foil.

10. Grill chicken for one hour or until juices run clear.

11. Let chicken rest for 10 minutes before removing from can.

12. Serve, with lime wedges.

Cooking time: 1 hour
Cooling time: 10 min
