Sweet Vidalia Onions with Blue Cheese

Ingredients:

4 large
Certified Extra Sweet Vidalia onions (cut crosswise into
1 inch thick slices)
¼ cup olive oil Salt & pepper to taste• Topping: 4 ounces blue cheese, crumbled ¼ cup extra virgin olive oil 2 tablespoons sherry wine vinegar ½ cup sliced almonds, lightly toasted 1/3 cup chopped fresh chives

Instructions:

1. Preheat oven to 400°F. Next, dip sliced onions into olive oil and place on baking sheet. Sprinkle with salt and pepper.2. Then, place baking sheet in oven and bake until edges are soft and golden brown in color, turning every 15 minutes. Onions should be done in 1 hour. 3. Transfer to platter and season again with salt and pepper. 4. Let cool. Next, sprinkle crumbled blue cheese over room temperature onions. Evenly pour remaining ¼ cup of olive oil. Drizzle with vinegar and top with remaining ingredients.
