1. Boil pork until cooked - about 30 minutes. When done, reserve ¼ cup of the water to add to casserole. Let the meat cool for about 10 minutes then dice it into cubes - about the size of dice. 2. Preheat oven to 375°F. 3. Place all ingredients, except cheese, in 2-quart casserole dish. 4. Bake, uncovered, for 25 minutes or until rice is tender. 5. Sprinkle with cheese. Bake 3 to 4 minutes more or until cheese is melted.
