Pork & Bean Casserole

Prep Time: 1 1/2 hrs. Skill Level: Easy

Ingredients:

1 pound (2 cups, drained) cooked pork, diced
1 (15.5-ounce) can black or pinto beans, drained and rinsed
1 (10.5-ounce) can condensed cream of chicken soup
2 (4-ounce) cans diced green chili peppers,
drained
1 cup rice
¼ cup water
1 to 2 tablespoons salsa
1 teaspoon ground cumin (optional)
¼ cup shredded cheddar cheese

Instructions:

1. Boil pork until cooked - about 30 minutes. When done, reserve ¼ cup of the water to add to casserole. Let the meat cool for about 10 minutes then dice it into cubes - about the size of dice.

2. Preheat oven to 375°F.

3. Place all ingredients, except cheese, in 2-quart casserole dish.

4. Bake, uncovered, for 25 minutes or until rice is tender.

5. Sprinkle with cheese. Bake 3 to 4 minutes more or until cheese is melted.
