Pork Roast with Sweet Potatoes

2 pounds (4 cups, drained) cooked pork, diced
1 (15.5-ounce) can sweet potatoes
1 green bell pepper
cup apple cider
3 tablespoons brown sugar
1 teaspoon cinnamon
Salt and pepper to taste


1. Boil pork until completely cooked - at least 30 minutes. Remove from heat and allow to cool then cut into cubes.
2. Preheat oven to 350F.
3. Put pork, chopped sweet potatoes, and chopped green peppers in large baking dish.
4. Mix the remaining ingredients and pour over all; cook for 30-40 minutes.
