Pork Roast with Sweet Potatoes

Ingredients:

2¼ pounds (4½ cups, drained) cooked pork, diced 1 (15.5-ounce) can sweet potatoes 1 green bell pepper ½ cup apple cider 3 tablespoons brown sugar 1 teaspoon cinnamon Salt and pepper to taste

Instructions:

1. Boil pork until completely cooked - at least 30 minutes. Remove from heat and allow to cool then cut into cubes. 2. Preheat oven to 350°F. 3. Put pork, chopped sweet potatoes, and chopped green peppers in large baking dish. 4. Mix the remaining ingredients and pour over all; cook for 30-40 minutes.
