Homemade Cornbread

Ingredients:

BAKING MIX (makes 9 cups)

4 cups all-purpose flour
4 cups whole wheat flour
1⅓ cups instant nonfat dry milk
¼ cup baking powder
1 teaspoon salt

CORNBREAD

1 cup baking mix
1 cup cornmeal
2 tablespoons sugar
1 cup water
2 tablespoons vegetable oil or canned applesauce
1 egg (or 2 tablespoons egg mix + ¼ cup water)

Instructions:

BAKING MIX

1. Mix all ingredients together.
2. Keep in airtight container at room temperature.
3. Stir mix before using.

CORNBREAD

1. Preheat oven to 400ºF.
2. Spray a 9 x 9 inch pan with nonstick cooking spray.
3. Combine baking mix, cornmeal, and sugar in a large bowl.
4. Add water, oil, and egg; stir until just blended. Do not over stir.
5. Pour into pan. Bake 20 minutes at 400ºF.
