Rhubarb Jam


Number of Servings: 5-6 jars

2 1/2 lbs rhubarb

1 1/2 lbs sugar

1/2 cup water

Rind and juice of two oranges


1. Wash, skin and dice rhubarb.

2. In a large saucepan, add the rhubarb, sugar & water.

3. Grate the orange rind and add the juice.

4. Cook for 30 minutes, stirring occasionally, until rhubarb is soft.

5. Pour into sterilized storage jars and seal.
