Wedding Cupcakes

Ingredients:

Wedding cupcake ingredients:

2 sticks (1 cup) unsalted butter
2 cups granulated sugar
1 teaspoon vanilla extract
4 eggs
3 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk at room temperature

Butter cream frosting ingredients:

1 stick (8 tablespoons) unsalted butter, softened
1 pound confectioners sugar
1 teaspoon vanilla extract
3-4 tablespoons milk

Instructions:

1. Preheat oven to 375 degrees.
2. In a mixing bowl, cream butter and sugar.
3. Beat in eggs and vanilla until well blended.
4. In a separate bowl, mix flour, baking powder and salt.
5. Slowly add into butter mixture, alternating with the milk, until blended.
6. Line muffin or cupcake tin with paper or foil cups. Add batter to each cup three-quarters from the top to leave enough room for the cupcakes to rise during baking.
7. Bake about 15 minutes or until golden brown.
8. Cool thoroughly before frosting. Decorate with an icing tube.

To make butter cream frosting:

1. In a small bowl, mix butter and confectioners sugar until smooth & creamy. Add vanilla and milk and stir until thick.

Helpful Hints:

These are so easy and inexpensive to make and decorate. A great presentation includes serving them on a large, multi-tiered dessert tray so it resembles a wedding cake.

To decorate the tiers, add real rose buds or other flowers nestled in between the cupcakes. You may also add lace ribbons, chocolate shavings, candy kisses, or substitute your own creative ideas for a beautiful & delicous "wedding cake".
