Aspen Fresh Cocktail

Ingredients:

3 oz. Pearl Persephone Vodka
3/4 oz. Fresh Lime Juice
1 oz. Simple Syrup
Dash POM Wonderful Pomegranate Concentrate
2 inches of a cucumber - about the size of 1/2 a lemon - don't use ends
slice of cuke for garnish

Instructions:

1. In a pint glass, muddle cucumber with 1/2 of the ice cubes until cucumber is mashed.

2. Add another 1/2 cup of ice and the rest of the ingredients, shake and strain into an ice cold martini glass.

3. Garnish with a cucumber wheel floating on top of drink.

Helpful Hints:

Aspen Fresh won the 2005 honors as Aspen’s official cocktail of the winter season.
