Sweet Potato Casserole

 

Number of Servings: 8
Prep Time: 30 Skill Level: Easy

Ingredients:

3 cups cooked and mashed sweet potatoes (can used canned)
2/3 cup white sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1/2 cup milk
2 eggs, beaten
1 tsp. salt
1 1/2 cup marshmallow creme


Topping
1 cup packed light brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour
1/2 cup butter, softened


Instructions:

Mash sweet potatoes slightly. Cream sugar and butter. Add eggs and beat well. Add salt, vanilla, marshmallow creme, and beat until all is mixed. Pour into large casserole dish. (Usually grease the dish)

Topping
Mix together with pastry blender or fork until blended. Add to top of casserole. Bake at 350 for approximately 35 minutes.

Helpful Hints:

I use a shallow casserole dish so that the topping is included in each serving.
