Super Chili

 

Number of Servings: 4-6
Prep Time: 55 min Skill Level: Average

Ingredients:

6 tablespoons of olive oil
2 tablespoons chili powder
2 medium onions, chopped
1 teaspoon cumin
1 sweet red peppers, finely chopped
1/4 teaspoon lemon pepper seasoning
1/4 teaspoon black pepper
4 cloves garlic, minced
1/2 teaspoon cayenne
1 teaspoon salt
1 pound of ground beef or ground turkey
2 (15 ounce) cans of pinto beans
1 (14 ounces) can crushed tomatoes1 cup beer OR water (alcohol cooks off and leaves a great taste)
1 cup Sanish flavored tomato sauce (Hunt's is great for this)
Toppings:
*2 teaspoons chopped chili peppers or small can green chiles (more pits mean more heat)
1/4 chopped cilantro (topping)
1 cup rough grated jack or sharp cheddar cheese
1/2 cup chopped onions
8 oz sour cream

Instructions:

1. On medium heat saute onion, garlic and red pepper in olive oil in large thick bottom pan or dutch oven. Stir constantly and cook until soft - careful not to have heat too high or cook too long - you don't want burnt bits in your chili.

2. Add ground meat (either beef or turkey) and spices. Cook until brown still stirring often to avoid burning. Should be about 5 to 7 minutes.

3. Add beans, tomatoes, tomato sauce and beer.

4. Cover and reduce heat and simmer for 20 to 30 minutes.

5. Top with chopped cilantro.

6. Serve with optional toppings - grated cheese, sour cream, chopped onions, and chopped peppers - on the side.

Helpful Hints:

* When chopping the chilis keep in mind that the pits make the heat - for a mild chili topping discard them and for a hot 'n zesty chili topping keep them all in.

Prep Time: 15 minutes
Cooking Time: 40 minutes

You serve this as part of a super bowl buffet for a crowd of up to 10. If you expect more or have hearty eaters in your group, double the recipe and the toppings.
