Three Bean Salad Recipe

1 cup fresh green beans, washed and cut into one-inch pieces
1 cup canned garbanzo beans, rinsed and drained
1 cup canned kidney beans, rinsed and drained
1 cup sliced water chestnuts, rinsed and drained
3/4 cup store bought olive oil vinaigrette dressing
lemon zest (to taste)


1. In a mixing bowl, combine the green beans, garbanzo beans, kidney beans and water chestnuts.

2. Add the vinaigrette dressing and the lemon zest.

3. Mix bean salad completely. Taste salad and adjust dressing and zest, if needed.

4. Allow salad to marinate for at least an hour before serving.

Helpful Hints:

This salad is a great side dish for a meat or fish entrée or a picnic or backyard barbecue. It can also be served in a soft tortilla shell with a slice of cheddar cheese, a dollop of sour cream and sprouts on top. This makes a quick lunch any time.
