This salad can be served in a variety of ways. Try any of the following:
* Serve chicken salad over a bed of washed baby spinach leaves, shredded red cabbage and cucumber slices. Serve along with baked sweet potato fries. Add a spoonful of salsa over the top of the salad for an extra boost of flavor.
* Mound the chicken salad on a bed of cooked couscous or quinoa and serve with steamed broccoli, mushrooms and water chestnuts.
* This chicken salad is also a great sandwich filling. Try scooping salad onto fresh focaccia bread and top with sprouts and shredded cheese. Serve with your favorite chips on the side.
