Vegetarian Hungarian Goulash Recipe

Ingredients:


* ghee or oil for deep-frying
* 300 grams pressed paneer, cut into 1 1/2 cm cubes
* 8 medium potatoes, cut into 2 1/2 cm cubes
* 5 medium tomatoes, peeled and quartered
* 1/2 teaspoon asafoetida
* 1/2 teaspoon pepper
* 1 1/2 teaspoon salt
* 1 1/2 tablespoons Hungarian sweet paprika
* 1 liter warm water

Instructions:


* Deep-fry the cubes of panir cheese in oil or ghee in a deep-frying pan or wok over moderate heat until they become dark golden brown Remove and drain.

* Heat 1 tablespoon of oil or ghee in a heavy large saucepan or wok.

* When hot, sprinkle in the asafoetida. Saute momentarily and add the tomato pieces, paprika, pepper, salt, potato, and deep-fried paneer.

* Pour in the warm water and raise the heat to full. When the water boils, reduce the heat slightly and cook, uncovered, for 20 minutes or until the potatoes are soft. Serve hot.

Helpful Hints:

Vegetarian Hungarian goulash recipe is a modification of the famous Hungarian goulash. Meat is replaced with the delicious deep-fried paneer.

This simple and nourishing meal is very satisfying, especially in cold winter months.

Sweet Hungarian paprika gives a special taste to this dish. Please don't leave it out from the recipe.

The preparation time doesn't include the time for making and pressing paneer. The instructions for that are on my website.
