Eggs Thomas

4 large eggs
1/4 cup milk
1/4 cup chopped ham
1/4 cup diced tomatoes
1/4 cup chopped onions
1/4 cup cheddar cheese
1 tablespoon chopped parsley
1 teaspoon dill weed
1/2 teaspoon thyme
1 Tablespoon Butter or margarine
2 English Muffins


1. Beat the eggs and the milk until just mixed. Set aside.
2. In a medium saute pan, melt the butter.
3. Saute the onions until just beginning to turn clear.
4. Add the ham and the herbs. Saute just until you can smell the herbs.
5. Add the tomatoes and the cheese.
6. Immediately add the egg mixture. Scramble the eggs.
7. Toast and butter the english muffins.
8. Plate the eggs. Cover one side with the upside down english muffins. (Buttered side on top of the eggs.)

Helpful Hints:

Serve with a side of fresh fruit, if desired.
