My Mother’s Zucchini Bread

 

Number of Servings: 1 loaf
Prep Time: 1 1/2 hrs Skill Level: Easy

Ingredients:

2 eggs
2/3 c. white sugar
2/3 c. brown sugar
2/3 c. oil
1 1/3 c. grated raw zucchini
1 1/2 tsp. Vanilla
2/3 c. chopped pecans
2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. baking powder
1 1/2 tsp. cinnamon

Instructions:

1. Grease and flour one loaf pan.

2. Beat eggs until foamy.

3. Add sugar, oil, zucchini and vanilla.

4. Mix lightly, but well.

5. Mix together ingredients above from flour on down.

6. Add dry ingredients to liquid mix, stir well then add nuts.

7. Bake at 350 for about one hour.
