1. Start by poaching your eggs. Poached eggs are made by breaking an egg and cooking it over boiling water for 2 to 3 minutes and are actually pretty easy to make.If you have a pan for poaching eggs, break one egg into each space and cook for two to three minutes.
If you don't have a pan made for poaching eggs you can buy one or use any small metal cup that will sit on top of boiling water. Muffin tins suspended from the sides of a roasting pan filled with water work well.
There are recipes for droppng the egg into a pan of boiling water, but these - even with vinegar in the water - don't usually produce nice looking eggs. If you have a circular form (that won't melt) to put in the pan so that the egg will keep it's shape you can try that. Heart shaped forms are nice for Valentine's Day eggs...
2. To make Hollandaise whisk 4-6 egg yolks in a metal bowl. Add chopped shallot. Put over pot filled halfway with boiling water and continue whisking while slowly adding butter one tablespoon at a time until mixture thickens. If mixture is thickening too quickly remove from heat and continue whisking. When all butter is added remove from heat and add vinegar and lemon juice. Set aside.
3. To assemble place toasted english muffin on plate and top with seared canadian bacon, top with poached egg and drape with hollandaise/bearnaise sauce. Sprinkle sliced olives on top. Enjoy!
