Herby Mashed Potatoes

 

Number of Servings: 2
Prep Time: 5 Mins Skill Level: Easy

Ingredients:

1 large Roosters Potato
Knob of Butter (soft)
Pinch Rosemary
Pinch Thyme
1/4 tsp Lazy Garlic
Splash of Milk

Instructions:

1) Peel Potato & cut into small chunks

2) Put into saucepan of boiling water & Boil for 15 minutes

3) drain the potatos & put into a bowl

4) chop enough fresh Rosemary & Thyme to make a pinch of each.

5) add to potatos the Garlic, rosemary, thyme & butter & mash together.

6) add splash of milk & give one final mash & stir.

7) Serve along with the rest of your meal.

Helpful Hints:

If you want a healthier option Olive spread can be used in place of the butter & the milk can be semi-skimmed or skimmed if you prefer.

A little with regards to these herbs goes a long way.

If you find the mash has gotten a little cool, 1 minute in the microwave on high will bring it back to temperature, just remember to give it another quick stir before serving.

This is a very flavourful mash, I would use it in place of roast potatos with a roast dinner, or with other flavoured things, my favourite thing is to serve it with Honey Roast Pork, brocoli & carots, perhaps with a Yorkshire pudding on the side (If you're no good with yorkshire's I strongly suggest Aunt Bessie's, they are a God Send!) Then just spoon over a little of the juices from the pork onto the mash - beautiful!

Even people like me who normally hate mashed potatos should try this, as noted, I hate mashed potatos however this was one of life's "Happy Little Accidents" when I cut my potatos too small one day & realising they were only suitable for mash decided to check out my refrigerator for a saving grace & came across some herbs & decided it couldn't make mash taste any worse, & instead turned into a beautiful combination.
