Number of Servings: 4
Prep Time: 45 mins.Skill Level: Easy

Ingredients:

1 stick butter (1/2 cup)
1 cup celery, minced
1 small onion, minced
1 quart half-and-half
2 (12 ounce) containers oysters
salt and pepper to taste

Instructions:

1. In a large frying pan, melt the butter over low heat.
2. Add celery and onion and cook 10 minutes until tender.
3. In a large pot, pour half-and-half and warm over medium-high heat.
4. Add melted butter, celery and onion and stir continuously until mixture just comes to a light boil. \
5. Add oysters and liquid into the pot and add salt & pepper to taste.
6. When oysters curl at the ends, remove from heat immediately and serve.

Helpful Hints:

Get this to the table quick so the oysters do not become tough and overcooked. Serve piping hot with plenty of oyster crackers or dense, crusty bread. Delicious!
