Rebecca's Banana Nut Bread

 

Number of Servings: 3 Loaves
Prep Time: 20Skill Level: Average

Ingredients:

4 Cups Pre-sifted Flour
1 Tablespoon Baking Soda
1 ½ Teaspoons Salt
4 Sticks of Butter (Sweet Salted) Softened
1 Cup (Packed) Brown Sugar
4 eggs
2 Teaspoons Vanilla
5 Large Ripe Bananas (Blended Thoroughly)
Cinnamon
Nutmeg
1 ½ Cups chopped walnuts

Instructions:

Preheat Oven to 350 and prepare 3 non-stick loaf pans by just lightly buttering them on bottom and all sides. Combine Flour, baking soda and salt and stir thoroughly.

In mixer, combine butter and brown sugar and mix until creamy. Add eggs one at a time and mix in. Add vanilla and then add nutmeg and cinnamon to your liking. Mix well. Then pour blended bananas into mixture. Mix well.

Then start adding the dry ingredients in 1 cup increments and mixing on low speed. Once all dry ingredients have been added, fold in nuts. Make sure all ingredients are dispersed equally.

Finally, pour into prepared loaf pans. Fill pans 2/3 of the way to make room for rising. Bake for 45 – 60 minutes or until a wooden toothpick comes out dry.

Let sit for 5-10 minutes to cool and then turn out of pan.

Helpful Hints:

I always double the recipe for the holidays, so you can cut in half if you wanna make less.
