Tortilla Chicken Casserole

Ingredients:

onion, chopped
2 cloves garlic, peeled and crushed 15ml cooking oil 1 1/2 tsp chili powder 8 chicken legs (drumsticks) 410g can of chilli beans 410g can whole peeled tomatoes 200g packet tortilla / corn chips 1 cup grated cheddar cheese

Instructions:

1. Preheat the oven to 180 degrees C or 350 degrees F. 2. Fry the garlic and onion in the oil until they go translucent. 3. Add the chili powder and cook for another minute. 4. Put the onion and garlic mix in a casserole dish. 5. Arrange the chicken legs on top of the onion. 6. Add the chilli beans on top of the chicken pieces. 7. Chop the peeled tomatoes and add to the casserole with the liquid from the can 8. Cover and place in the heated oven. Cook for about 1 hour until the chicken is done. 9. Remove the casserole from the oven. Scatter the corn / tortilla chips over the casserole and then sprinkle with the grated cheese. 10. Place under the grill until the cheese is melted.
