Carrot Soup
Ingredients
6 large carrots, sliced thin6 cups chicken stock1 tablespoon butter or margarine1/8 teaspoon ground cinnamon1/8 teaspoon ground cumin1/8 teaspoon ground coriandersalt and pepper
Instructions:
1. In heavy saucepan, add carrots, butter and 1/4 cup chicken stock and cook carrots until tender.2. Remove carrots to a blender and puree. Return to saucepan.3. Stir in cinnamon, cumin, coriander, salt & pepper to taste.4. Add remaining broth, and simmer for 20 minutes. Serve hot.

Helpful Hints:
This is a favorite at our Christmas holiday gatherings and makes a great winter soup througout the season.
