1 cup dry bread crumbs 1/4 cup grated Parmesan cheese 2 teaspoons Italian seasoning 1 teaspoon salt 1 egg 2 tablespoons milk 6 boneless skinless chicken breasts, cut into 1 inch cubes 1 pint cooking oil for frying
Instructions:
1. In a small bowl, combine the bread crumbs, Parmesan cheese, Italian seasoning, and salt. 2. In another small bowl, add eggs and milk and beat well. 3. Dip each chicken piece into egg mixture and roll in bread crumb mixture to coat throughly. 4. Heat oil in large skillet to 375F and fry coated chicken pieces on both sides until golden brown. Drain on paper towels. Serve with honey mustard or barbecue sauce.
Helpful Hints:
You can also cut chicken into strips for easy "Chicken Fingers." Either way, this recipe also makes for a fun kid's dinner or party food.
