Jin Dui - Sesame Cookies with Red Bean Paste


Number of Servings: 3 dozen
Prep Time: 45 min Skill Level: Average


6 oz sweet potatoes
10 oz red bean paste
1 1/2 cups glutinous rice flour
1/3 cup unbleached white flour
2/3 cup white sesame seeds
2 tablespoons sugar
1/2 cup hot water


1. Peel the sweet potatoes and cut them into cubed pieces.
2. In saucepan boil sweet potatoes until tender.
3. Drain and mash them.
4. Sift the glutinous rice flour and white flour together.
5. Mix together with the sugar and mashed sweet potato.
6. Slowly sprinkle in the hot water kneading the mixture as you add the water to make sure that it is well mixed.
7. Shape the dough into balls and then press each ball into a flat round shape.
8. Spoon red bean paste onto each as filling and form back into balls with the paste inside.
9. Dip each ball into cold water, then roll in sesame seeds until coated thoroughly with the sesame seeds.
10. Deep fry on a low heat until the balls are golden and puffy.
11. Drain on a paper towel and serve.

Helpful Hints:

Most recipes call for forming small balls of dough, but some traditional cooks prefer large Jin Dui and either way is fine.
