3 lb mussels 2 tablespoons butter 2 teaspoons crushed garlic ¼ teaspoon fresh ground pepper ¼ teaspoon salt ¼ teaspoon fresh oregano, chopped fine 2 tomatoes, diced ½ cup fresh basil, chopped ¼ cup white cooking wine ¼ cup fish stock or water 2 lemons, sliced
Instructions:
1. Wash the mussels and DISCARD any that stay open.
2. In a large frying pan, sauté the garlic, oregano and tomatoes in the butter for one minute.
3. Add the pepper, salt, wine, fish stock and mussels.
4. Cover and let steam for 5 minutes or until the mussels are open.
5. Sprinkle with the chopped basil.
6. Serve with lemon slices.
