In
a bowl place your ground all spice,ground cinnamon, lime or lemon juice, grated
nutmeg, chopped spring onions, chopped red chilli, grated onion and seasoning.
Pound and mix all the ingredients together until it becomes a thick paste.
Cut
across the chicken drumsticks several times with a sharp knife. Rub the mixture
all over the chicken drumsticks, especially into the cuts. Cover and leave in
a cool place for at least an hour to marinate.
Cook the chicken under a preheated
grill, turning occasionally for 15-20 minutes or until thoroughly cooked.
As
an alternative they can be cooked on a hot barbecue for around 10 minutes each
side.
Serve with West Indian Hot Pepper Sauce and a large salad.
