Chicken Valdostana

chicken valdostana2 large chicken breasts, cut in half
1/4 cup olive oil
1/2 stick butter
1/2 cup chicken stock
4 thin slices prosciutto
4 thin slices fontina cheese
Salt and pepper to taste


1. Flatten chicken breasts and lightly dust with flour.
2. In a large skillet, heat oil and saute chicken until golden brown on both sides.
3. Place chicken on plate and discard oil from skillet.
4. Add butter and broth to skillet and heat until blended.
5. Return chicken to skillet and cover each piece with prosciutto and cheese slices
6. Cover skillet and cook until the cheese is melted.
7. Transfer the chicken to a serving platter. Keep warm.
8. Continue to heat butter and chicken stock sauce until it is slightly thickened.
9. Season with salt and pepper.
10. Pour sauce over chicken and serve.
