Veal Parmigiana

Ingredients

2 cups Oil for frying
4 veal cutlets sliced thin and pounded flat
Dry bread crumbs (Italian seasoned or plain)
2 eggs, beaten
Olive oil for frying
2 cups prepared Italian tomato sauce
Grated parmesan cheese
4 slices mozzarella cheese

Instructions:

1. In large skillet, heat oil slowly until just bubbly.
2. Dip each cutlet into egg, then into breadcrumbs to coat generously.
3. Slowly place cultets into hot oil and fry on both sides until golden brown.
4. Remove cutlets to drain on paper towels.
5. Preheat oven to 350F.
6. Arrange cutlets in a baking dish and spoon tomato sauce on top to cover. Sprinkle with grated parmesan cheese
and top with mozzarella slices.
7. Bake for 15 minutes or until cheese is melted. Serve hot with pasta as a side dish.

Helpful Hints:

For quicker prep time, arrange cutlets in a shallow pan and put them in the broiler on high for 30 seconds or until cheese is melted and bubbly.
