Refried Beans

Ingredients

1 - 16 oz. can Pinto beans 2 tablespoons lard or peanut oil 1 cup chopped onion 2 garlic cloves, minced 1 teaspoon chili powder 1 teaspoon salt 1/8 teaspoon black pepper

Instructions:

1. In a large skillet, heat lard or peanut oil over medium heat until. 2. Add Pinto beans and cook 5 minutes. 3. Mash beans by hand with a potato masher or fork. 4. Add chopped onion, garlic, chili powder, salt and pepper. 5. Cook and stir for another five minutes or until a thick paste forms. Garnish with shredded cheddar or Montery Jack cheese.

Interesting note: There's nothing refried about refried beans, but in Mexico "re" is used for emphasis, so refried beans can be roughly translated in English as "really fried" beans, not twice fried.
