Shrimp Jambalaya

Ingredients
|
3 tablespoons cooking oil or bacon fat 2 large onions, chopped 4 stalks celery, finely chopped 1 small green pepper, chopped 1- 16 oz. can crushed tomatoes 1 cup tomato sauce 1 clove garlic, minced 1/8 teaspoon cayenne pepper 1 1/2 lbs. cooked shrimp 2 tablespoons dried parsley Salt to taste 2 cups hot cooked rice

Instructions:

1. In a large skillet, heat oil or bacon fat. Add onions, celery and pepper and saute until tender.
2. Add crushed tomatoes, tomato sauce, garlic and cayenne pepper and simmer on low heat for about 20 minutes. 3. Add the shrimp, parsley and salt and cook for a few minutes until shrimp are hot. Serve over rice.
