1. Cut the avocados in half lengthwise, pull the halves apart and remove the seeds. 2. Scoop out the fruit into a medium-size bowl and mash with a fork. Don't use a food processor, you want the avocado mash to be slightly lumpy. 3. Gently stir in the garlic, red onion, red chile, 3 tablespoons of the olive oil, and lime juice. 4. Add salt and pepper. 5. Drizzle the remainder of the olive oil over the dip and sprinkle with cayenne for garnish. 6. Serve immediately.
