Black Bean Chili w/ Shrimp

Ingredients

1 medium green bell pepper, seeded and chopped 1 red bell pepper, seeded and chopped 1 tablespoon cooking oil 1 large onion, chopped 1 clove garlic, minced fine 1 tablespoon chili powder 1 teaspoon pepper 1 (16-ounce) can chopped tomatoes 1 (16-ounce) can black beans, drained 1 pound medium shrimp, peeled & deveined

Instructions:

1. In a large pot, add cooking oil and saute peppers, onion, and garlic until tender. Stir often to prevent burning. 2. Add chili powder, pepper, tomatoes, black beans and shrimp and cook for 5 -8 minutes, or until the shrimp turn pink.

Helpful Hints:
|
Serve with a green salad and tortillas or fresh Italian bread. This is an easy to fix, hearty meal that makes a great addition to fall dinners or party menus. For parties serve in a big mexican bowl with a large spoon for guests to dish out their own into small paper or plastic bowls. Have plenty of plastic spoons. Serve with corn chips.
