Colcannon - Irish Cabbage & Potato Mash

Prep Time: 35-45 min Skill Level: Average

Ingredients:

2 pounds medium-size yellow potatoes
2 strips Irish or Canadian bacon
1/2 pound cabbage
1/2 cup water
2 tablespoons butter
1 teaspoon minced onion
1/2 teaspoon salt
1/8 teaspoon pepper

Instructions:

1. Boil the whole unpeeled potatoes until they are soft when pierced with a fork.

2. Drain, peel and mash the potatoes.

3. Cook the 2 strips of bacon.

4. Cut cabbage into very fine strips and cook in 1/2 cup of water covered with the bacon strips. Cook the cabbage until very tender. Drain.

5. Melt butter in a large saucepan on low heat.

6. Add minced onion, salt and pepper, potatoes and cabbage with bacon. Blend thoroughly and heat.
