Vegetable Gazpacho

3 slices toasted white bread cut into cubes
1/4 cup red wine
4 cloves of minced garlic
7 large tomatoes cut into wedges
3 medium chopped onions
4 cucumbers, peeled and chopped
3 green peppers chopped
1 Tbsp. paprika
5 Tbsp. oil
3 Tbsp. red wine vinegar
Juice of 1 lemon
Tabasco sauce to taste
salt and pepper to taste
Sour Cream


1. Soak bread cubes in red wine until bread soaks it up.
2. Put bread in blender with vegetables and blend.
3. Add the oil 1 Tbsp. at a time.
4. Add vinegar, juice and seasonings and blend a few seconds more.
5. Put soup in refrigerator to chill.
6. Serve cold and top each serving with sour cream and croutons.

This delicious soup is served cold and is perfect for a hot summer day.
