Boil potatoes. Reserve 3 cups for dough. Put boiled potatoes through a ricer or mash them. Add shredded cheese and onions, salt and pepper. Best done the night before
Dough: Beat the eggs, salt, oil, and mashed potatoes
together. Then add flour 1 cup at a time. Knead the
dough and let rest for 20 minutes.
Roll out dough with cookie cutter and put a tablespoon
of filling. Seal and put on cookie sheets to freezed
or boil right away. They are done when they float to
the top.
