Caribbean Jerk Chicken

Ingredients:

8 chicken drumsticks (skinned)
West Indian Hot Pepper Sauce
Ground all spice
1 tspn ground cinnamon
half small onion grated
juice of 1 lime or lemon
1 tspn grated nutmeg
5 spring onions finely chopped
1 red chilli (hot) deseeded and finely chopped
Salt and freshly ground black pepper

Instructions:

In a bowl place your ground all spice,ground cinnamon, lime or lemon juice, grated nutmeg, chopped spring onions, chopped red chilli, grated onion and seasoning. Pound and mix all the ingredients together until it becomes a thick paste.

Cut across the chicken drumsticks several times with a sharp knife. Rub the mixture all over the chicken drumsticks, especially into the cuts. Cover and leave in a cool place for at least an hour to marinate.

Cook the chicken under a preheated grill, turning occasionally for 15-20 minutes or until thoroughly cooked.

As an alternative they can be cooked on a hot barbecue for around 10 minutes each side.

Serve with West Indian Hot Pepper Sauce and a large salad.

Helpful Hints:

You can test to see whether the chicken is cooked by piercing the chicken drumstick at the thickest part with a sharp knife or skewer and see if the juices run clear. When the juices run clear the chicken is cooked.
