Homemade Turkey Soup

Ingredients

Ingredients for turkey stock:

6 cups chicken broth
1 large onion, chopped
2 bay leaves
giblets and neck bone from turkey
2 stalks celery with leaves
1 teaspoon dried parsley
black or white pepper


Ingredients for turkey soup:

5 cups turkey stock
3 stalks celery, chopped
2 large potatoes peeled and cubed
2 carrots, chopped
1 medium onion, chopped
1 tablespoon dried parsely
1 cup uncooked noodles
2 cups cooked turkey, cubed

Instructions:

1 In a large soup pot, heat the chicken broth and add remaining ingredients

2. Bring to boil, then cover and simmer for two hours, skimming any foam from the surface.

3. Strain the stock into a large bowl and discard everything else.

4. Let cool in refrigerator and skim any remaining fat that collects on top.

Makes about 5 cups.

Instructions for turkey soup:

1. In a large saucepan, combine turkey stock, celery, potatoes, carrots, onion & parsley.
2. Bring to a boil on high heat, then reduce to low heat, cover and simmer for 45 minutes or until vegetables are tender.
Add noodles and turkey meat. Simmer until noodles are tender.

Helpful Hints:

For an extra-delicious soup, make this the day before to allow the flavors to really blend.
