Chicken Parmigiana

Ingredients:

chicken parmigiana4 skinless, boneless chicken breast halves, pounded thin
2 eggs
1/2 cup dry bread crumbs
oil for frying
24 ounce jar spaghetti sauce
mozzarella cheese, sliced thin
1/4 cup grated Parmesan cheese

Instructions:

1. Preheat oven to 350 degrees F (175 degrees C)
2. Place chicken breasts on a cutting board or other clean, solid surface and use a mallet or meat pounder to flatten chicken breasts to a uniform 1/4 inch thickness.
3. Pour eggs into a small shallow bowl and beat with a whisk. Place bread crumbs in a large shallow bowl.
4. Dip chicken breasts into the egg mixture, then dredge through bread crumbs until breasts are completely coated.
5. Heat 1 inch of oil in a large frying pan.
6. Place coated chicken breasts into hot oil and fry until golden brown. Turn and brown the other side. Remove chicken from frying pan and drain on paper towels.
7. Place coated chicken on a baking sheet and cover with tomato sauce and top with mozzarella. Sprinkle tops with Parmesan cheese. Place in preheated oven for 20 minutes, or until cheese is melted.

Serve with a side of spaghetti or salad, and lots of crusty Italian bread.

Helpful Hints:

Use extra thick slices of mozzarella for an extra cheesy taste, or use packaged pre-shredded mozzarella for quicker preparation.

Save work by having chicken breasts pounded and flattened at your local butcher or supermarket.

As an alternative to oven cooking. place chicken breasts under the broiler for a few minutes until cheese is brown and bubbly.
